Appetizer

Jerusalem artichoke soup with a touch of champagne, sautéed tiger prawns, and basil foam

 

Main course

Thyme-baked venison tenderloin with blackcurrant sauce, pickled chanterelles, and baked potatoes with Västerbottensost cheese

Pan-seared char fillet with browned butter sauce, fennel and orange salad, and potato and cauliflower purée

Dessert

Chocolate and licorice terrine with raspberry mousse and toasted pistachios
