Thyme-baked tournedos with truffle-infused duck stock, served with potato fondant and a kale and bean ragout

CHOCOLATE BAVAROISE

The kitchen's chocolate bavaroise with blueberry truffle, served with tuile, blueberry meringue, and raspberry and white chocolate cream
